Tantalizing Thursday-North Carolina

Welcome to Tantalizing Thursday on Chief 187™Chatter.




The only night race of the Chase is being held at Charlotte Motor Speedway. The Bank of America 500 will be run on Saturday, October 13th and that means dinner during the race!

I’ve assembled another round of great recipes to enjoy from North Carolina to try for this race weekend and in the future.

First up is a great way to enjoy your salad – covered in pork fat!


Killed Lettuce and Onion

"Growing up in the North Carolina Mountains, everyone knew what killed lettuce was and how to fix it. This is my mom's recipe, and it is very simple and basic. In the south it is usually served with pinto beans and cornbread." – shann




Ingredients:

Original recipe makes 4 servings
4 slices bacon
4 green onions, chopped
1 head leaf lettuce - rinsed, dried and torn into bite-size pieces


Directions:

Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Place the bacon slices on a paper towel-lined plate.
Add the chopped green onions to the bacon grease; cook and stir for about a minute or until the onions reach your desired tenderness. Pour the onions and bacon grease over the lettuce and toss lightly. Crumble the bacon and add it to the lettuce. Serve immediately.


The next recipe aims to recreate a succulent burger had at a North Carolina establishment. Nothing better than burgers on race day or any day!

Big Smokey Burgers

"I created this recipe while trying to recreate the best burger I had ever tasted at a restaurant in the Great Smoky Mountains of North Carolina. My family and I think these burgers are better! They are packed with flavor!" – Janine




Ingredients:

Original recipe makes 6 burgers
2 pounds ground beef sirloin
1/2 onion, grated
1 tablespoon grill seasoning
1 tablespoon liquid smoke flavoring
2 tablespoons Worcestershire sauce
2 tablespoons minced garlic
1 tablespoon adobo sauce from canned chipotle peppers
1 chipotle chile in adobo sauce, chopped
salt and pepper to taste
6 (1 ounce) slices sharp Cheddar cheese (optional)
6 hamburger buns


Directions:

Preheat an outdoor grill for medium-high heat.
Combine ground sirloin, onion, grill seasoning, liquid smoke, Worcestershire sauce, garlic, adobo sauce, and chipotle pepper in a large bowl. Form the mixture into 6 patties. Season with salt and pepper.
Place burgers on preheated grill and cook until no longer pink in the center. Place a slice of Cheddar cheese on top of each burger one minute before they are ready. Place burgers on buns to serve.


Lastly, to end the meal on a sweet note, some dessert is a must. I found this recipe that utilizes the fruit of the season in a delightful cake. This one was submitted by the former governor of the state.



Carolina Apple Cake

Ingredients:

Mix:
1-1/2 cups cooking oil
2 cups sugar
4 eggs, beaten

Sift together:
3 cups all-purpose flour
1 teaspoon salt
2 teaspoons vanilla

Add:
1 teaspoon baking soda
3 cups diced peeled apples
1 cup chopped nuts

Sauce:
1 teaspoon butter
1 cup brown sugar
1/4 cup milk
1 Tablespoon vanilla


Simmer sauce for 3 minutes, and then pour over warm cake.
Bake at 350 degrees for one hour.



These recipes will hopefully come in handy for race weekends in Charlotte and many other times.

  1. OR you go to Bojangles, get a 12 piece Tailgate pack and 1 gallon of their legendary sweet tea and you don't have to cook and you can just enjoy the race! :D
