Tantalizing Thursday-Parmesan-Dijon Chicken

Welcome to Tantalizing Thursday on Chief 187™Chatter. Now that the holidays are over people tend to resume “normal” eating. For those of us who are constantly busy but still want to put a tasty, healthy, and crowd-pleasing dinner on the table recipes that are easy for weeknight craziness are much appreciated. I stumbled across this one for chicken, a staple that can be dressed up in myriad ways, that my three children all enjoyed and my husband and I remembered fondly. I hope this adds some ease and brilliance to your chaotic weeknight menu. And, because it is so good, it is perfect for relaxed weekend entertaining! Enjoy!!

Parmesan-Dijon Chicken

Ingredients:

¼ cup butter or margarine, melted
2 tablespoons Dijon mustard
¾ cup Progresso® dry bread crumbs (any flavor)
¼ cup grated Parmesan cheese
6 boneless skinless chicken breast halves (1 3/4 pounds)

Directions:

Step 1 Heat oven to 375ºF. Mix butter and mustard in shallow dish until well mixed. Mix bread crumbs and cheese in large plastic bag.

Step 2 Dip one piece of chicken at a time into butter mixture, coating all sides. Then place in bag of bread crumbs, seal bag and shake to coat with crumb mixture. Place chicken in single layer in ungreased rectangular pan, 13x9x2 inches.

Step 3 Bake uncovered 20 to 30 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.


While making this recipe I substituted store brand bread crumbs for the name brand dry bread crumbs, but did not skimp on the quality of Parmesan cheese as that is a bold flavor that infuses the dish. The side dishes to serve with this meal are vast; choose your favorites among vegetables, starches, and the like. We served a cheesy broccoli rice one time, a homemade rice pilaf the next with some steamed string beans, and always add a garden salad on the side. Some Stove Top stuffing mix would complement this dish as would any potato side dish. It is best to choose your family’s favorites to add to this extraordinary yet simple chicken recipe.

  1. Yum! Would you believe Target sells something similar to this? Of course, they charge a lot extra for the cheese and bread crumbs! I've wanted to make it at home...this recipe looks great!
