Welcome to Tantalizing Thursday on Chief 187 Chatter. As the days turn cooler, the leaves on the trees grow more vibrant, and a gentle breeze blows, many turn their attention to
the all-important and totally consuming TAILGATE! Whether football games or NASCAR races, pro games or local high school competitions, this is the time for gathering with friends around the
car, sitting in team chairs, and passing a bottle of this or a pitcher of that to fill thirsty fans’ glasses. Many tailgaters have made the process an event that rivals the actual game! From marinating to grilling, nachos to hummus, and scrumptious, rich desserts, there is no limitation save your imagination for tailgating. This recipe is simple, delectable, and perfect for the tailgate or a party.
Swiss and Bacon Dip
Recipe acquired from: http://foodnetwork.com /recipes/Rachel-Ray
Ingredients:
8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of spiced flat breads, cocktail sized pumpernickel or rye breads, or sliced whole grain baguettes, for dipping
Directions:
Preheat oven to 400 degrees F.
Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.
In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.
Variation: Swiss and Bacon Dip with Horseradish - Stir in 2 rounded teaspoons prepared horseradish when combining cheese and bacon.
Having tried and true ingredients for a large group, tailgaters or otherwise, who will be consuming the recipe is always a great idea. Leave hard to find ingredients, low cal/low taste recipes for others! This should bring pleasing smiles to your gathering and gain you a very positive “foody” reputation. In an effort to make this even more accessible and less time
consuming, purchase Real Bacon Bits at your local grocery store and your work in preparation and clean-up has been reduced greatly!
Please join me tomorrow as we close the week with my personal favorite, the Friday Music Blog.
